Recipe: Baked Bean Salad

image3 (1)I have been on a diet since a month, I know it’s tough but this time I have passed the 21 days test. They say if you follow anything for 21 days, it becomes a habit. Though I don’t really believe this is true but it kinda worked for me. It has almost been 30 days and I don’t crave for a samosa. Yes, I don’t!

But my taste buds are still alive and active, they want something delicious every now and then. So, I tried a few salads that are healthy and delicious. I know it seems like a weird combination but you must try it. It’s a part of the first set of recipes I’ll be developing for #foodiegetsfit.  Here’s how you can make what I call the Great Bean Salad.

Ingredients:
1 capsicum
1 onion
1 bell pepper
1 can of baked beans / You can bake them at home too.
Add a couple of broccoli sticks as per taste
Salt to taste
8-10 garlic chopped
1 tsp Ajwain or carom seeds
Chilli powder as per taste
1 tsp jeera or cumin seeds
2 tbsp olive oil

Method:

Cook broccoli separately in a non-stick pan till it starts to turn Brown.

In another pan, add 2tbsp olive oil. Once oil is HOT, add finely chopped garlic.

Once the garlic is cooked, add cumin seeds and carom seeds

Add onions and cook till pink

Now add vegetables and cook

Once the vegetables are close to being cooked, add one can of baked beans.

Let it simmer

Add salt, sugar, chilli power

Cover and cook for 3 minutes

Garnish with coriander and mint leaves

Serve with some garlic roasted bread.
